Macadamia Nut Waffles with Haupia Sauce!

I am back!  I think!  Wow, this cold has knocked me on my tookus.  I am going to take these few minutes of "all meds full force" to get this blog up and out to you all!  I am so glad that even when I am unable to be around for a day or 2 you all hang in there, and keep the chatter going in my kitchen.  I don't like the quiet, we all know this!  You guys really are the greatest, and my life would be so boring without you!

 
I have been craving waffles.  The weather was gorgeous a few days ago and a friend of mine was headed on a getaway with her hubby to Hawaii.  It all just sort of got me thinking.  I have also been wanting some macadamia nuts but they are so hard to find here and when I do they are 20.00/lb!!  Well, I decided to go for it, and came up with this great recipe.  Or so I think it is a great recipe, I guess you will have to try it yourself.  I was reading about Haupia recently and thought it should go on top of these waffles.  For those of you who don't know what Haupia is, it is (my interpretation) like coconut pudding.  Mine is a bit thinner so it can be poured over the waffles.  Here is what came of both!  

For the Haupia you will need:
2- 2 1/2 cups coconut milk
2 tbsp cornstarch
1/4 cup (a generous 1/4 cup) granulated sugar

In a small saucepan combine all ingredients.  Turn on heat and stir constantly until the sauce comes to a boil.  Remove from heat, pour into a bowl and let sit until you are read to use it!

You will need for the waffles:
1 1/2 cups flour
2 tbsp. sugar
1 tsp. baking powder
1/4 tsp. salt
1 1/4 cups milk
2 eggs (whites separated from yolks) you will use both
1 tbsp. vanilla extract
1/2 cup macadamia nuts (chopped FINE in food processor)

In a bowl, separate egg whites from the yolks.  Whip the whites to stiff peaks and set aside.  In another bowl combine flour, sugar, baking powder, and salt.  Mix thoroughly, add egg yolks, milk, vanilla extract and chopped nuts.  Make sure all ingredients are completely combined!!

Carefully fold in egg whites until the batter is fluffy and all the whites are incorporated.


Cook waffles according to your waffle makers directions.  I got 6 large round waffles out of this amount of batter.

The haupia was delicious.  I would have enjoyed some fresh pineapple and strawberries along side of them too!  The texture from the nuts, and the coconut flavor of the haupia almost makes you think there is coconut IN the waffles!  Loved these.
