Breakfast- Ham & Cheese Omelette Cups

Good Morning my beautiful readers!  


The sun is shining in Omaha, I even hear birds singing!  I wonder if they packed it in and moved back up north with this crazy nice weather thinking Spring is here?!  I don't care, I am going to soak up the sun, listen to the music of the birds singing, *well in the background while I listen to the BeeGee's*.  I have leftover ganache I need to take out, whip and use as icing on some chocolate cupcakes I need to make.  I can't see a thing wrong with the day so far! And btw, I LOVE the BeeGee's.  I am certain I was an original member!


I have some leftover wonton wrappers left from the Nutella Ravioli and the Wontons, and looking over my recipes I noticed I haven't written any real breakfast recipes.  This is a simple and easy quick fix.  I think you could you biscuits or sandwich bread for your cups as well.  You won't get the crisp factor but they will be just as great.  I also don't see any reason you can't just put one egg in each of these and bake them how you like.  This recipe is all about easy though so let's get it done, so you can make it soon!  I made these last night and I am noshin' on the 2 that were leftover, and they are AWESOME reheated too!!  This recipe makes just 6 cups so double, triple, QUADRUPLE! :)

You will need:
Wonton wrappers (square or round)
3 eggs
2 tbsp milk
1 tbsp FINELY chopped fresh parsley
1 tsp FINELY chopped green onion
1/2 cup shredded cheddar ( or cheese of choice )
1/3 cup diced ham
Salt and Pepper to taste


Preheat your oven to 350 degree's.  Using a muffin tin, spray them with nonstick cooking spray or brush them with veggie oil or melted butter.  Using 2 wonton wrappers for each cup so they don't rip.  Gently push them down into the muffin tin, and then spray or brush again. 




 Set aside.  In a bowl whisk eggs, milk, salt and pepper.  Whisk very well!!  Add in ham or you can put it into each individual cup (for the sake of equality).  Add in most of the cheese leaving just a bit left to top them with.  Fill the wontons cups and top with remaining cheese.  Pop in the oven for 20-25 minutes.  




Check them at 15 and see if you need more time.  Mine took 20-22 minutes, but I don't like ANY snotty egg stuff, it ALL has to be done!  Sorry for the attractive description but, you know me, keep it real girl.  



Enjoy!  If you do scrambled eggs like this recipe is written you can even have them as finger food!  If you do one egg per cup and make them so the yolk is runny you definitely need a plate!

    1. I grew up in a small town and my parents still live there. My mom asks the manager of the grocery store in town and he orders what she needs. Look in your produce section, most grocers are very willing to special order items!!! Let me know if you try it!

    1. "The most awesome life" Well I am not sure I would go that far. There are likely lots of personal things you don't know about me but, I have a husband I adore, who loves me to the moon, and a child who is my world, and a granddaughter who is the other part of my world, and I am alive. I try to keep the good parts in my sight.......I am working hard on positivity this year! Thank you and I am so glad you feel lucky to be in my world, it means I am doing something positive for at least 1 person and that is my goal each day!

I am a great cook, not a baker (I excell at rice krispy treats!) But your description and instructions seem like I could do it too! But I must schedule a "ChefWannabe Cooking Class" time each week for myself! Thought for February! Hey, i have one extra day in February!

  4. I've done something similar to this.... like mini quiches, but it was a bit different. I like this variation. Single servings like this seem "fancy" when you have company over for a brunch. And thank you for the positivity.... it is refreshing. My husband fought cancer for 13 months (and lost the battle). In our family, we say, "Any day that you have a pulse is a GOOD DAY." My kids and I don't tolerate whining very well. Have a good rest of the week.

  5. Oh Adele, I am so sorry for your loss. I find it ironic and very inspiration when a family like your own goes through a great loss, and comes out like you seem to. Your husband is proud of you, for living your lives, even without him physically here. One day my friend....can you imagine the reunion that will be?!! He is in the safest place possible, your heart. You also enjoy your week!

    1. Thank you... I see you've had experience with cancer also. It's amazing how many lives have been affected by it. We keep on keeping on here. And indeed - we all look forward to that amazing reunion one day! Blessings to you and your hubby!

  6. Are these regular size muffins or the 'Texas' size? I have a 6-cup tin, but it is the 'Texas' size.

  7. They are regular size BUT if you just get egg roll wrappers instead of wonton wrappers they are bigger and should work well for you too!!!

  9. I made these tonight! I wish I could send you a photo.Oh so yummy! I didn't have parsley so I used a chiffonade of spinach. I made 8 of them with only 4 eggs and I added some siracha to the egg. Thank you! The possibilities are endless with these! Am going to have so much fun with these! *cheers*!
